SESSION 5: YELLOW & WHITE TEA

In each session, we’ll begin with a brief recap of Tea 101 material, then move quickly into tasting and comparing examples of the specific style on which we’re focusing.
In Session 5, we’ll learn about two categories which are generally under-appreciated outside of China and Taiwan: yellow and white teas. As well as learning how these teas are produced, and how their production is similar to, and different from, that of related categories, we’ll work on tuning in to some of the rich nuances offered by these teas that can easily evade the unpracticed palate.
In the West, we’re generally most focused on flavor and fragrance. However, many teas reveal their greatness through texture, or even more intangible qualities. During this session, we’ll focus on a few of those.
