SESSION 1: PREP, BREWING & CARE
SUNDAY, FEBRUARY 25TH | 12:30-3:00 PM
In each session, we’ll begin with a brief recap of Tea 101 material, then move quickly into tasting and comparing examples of the specific style on which we’re focusing.
For 2018, I’ve added a new session to the series, where we’ll focus on developing your knowledge and skills (gōngfū — 工夫) around tea preparation.
We’ll talk about the most important factors in brewing any tea, specific ways you can apply these to each major category of tea, and what you can do to take your brewing even further.
We’ll also cover some important differences between keeping teas fresh, and storing them for aging.
This session will include hands-on brewing practice, and you can even take home your own gaiwan for only $10.00 extra. ($9.00 if you’re preregistered for the whole series!)
