SESSION 3: OOLONG TEA

In each session, we’ll begin with a brief recap of Tea 101 material, then move quickly into tasting and comparing examples of the specific style on which we’re focusing.
Wulong (often spelled “oolong”) is one of the most diverse, deeply exquisite, and potentially expensive categories of tea.
In Session 3, we’ll find out how factors of oxidation, roast, and leaf style create that diversity, and begin to look at major factors of terroir, agriculture, and processing skill which impact the tea’s quality and, accordingly, its expense. We’ll explore these factors by tasting examples of several of the major styles of wulong — representing various points on the spectrums of oxidation, roast, leaf presentation, and quality — as well as watching videos of cultivation, plucking, and several stages of wulong’s complex and varied production processes.
In the time available, we’ll only have opportunity to glimpse the possibilities of this category, but look for more in-depth focus on wulong in the next series, later this year.
