Course 1: Mardi Gras Lumpia
Shredded chicken, green bell pepper, onion, celery, cajun seasoning, gumbo dipping sauce, pickled okra.
Course 2: Bistek Tacos with Atchara
Soy sauce and calamansi marinated steak, 4 Hermanas tortillas, pickled papaya, carrots, mango, bean sprouts, red onions, thai chiles, rice vinegar, Bee Local honey.
Course 3: Crispy Adobo Wings with Mango Chili Sauce
Soy-vinegar simmered then battered deep-fried chicken wings, mango, fish sauce, thai chiles.
Course 4: Pork Belly Adobo, Berde ang Bigas, Apple Slaw
Carlton Farms pork belly simmered in soy sauce, vinegar, and Southeast Asian spices. Served with cilantro-green onion rice ad apple slaw with calamansi-honey vinaigrette.
Course 5: Salt and Pepper Tofu Salad with Sawsawan Vinaigrette
Fried Natural Biu tofu, Myracle seasoning, seasonal PSU farmer's market greens, tomatoes, cilantro, cucumbers, orzo, soy-lemon vinaigrette. (vegan)
Course 6: Food for the Gods a la Mode
Date and hazelnut blondie, Magnolia Halo Halo ice cream, calamansi-Tillamook butter caramel.
